Since the Great British Bake Off started again I've had a massive urge to bake, and seems as cupcakes are my favourite thing to bake - and eat - I thought I better whack some together. This is actually from a recipe for a different cake, but it works all the same! - and I messed around with the icing until I thought I had enough, it was a bit ad-hoc!
What you'll need:
125g caster sugar
2 eggs, beaten
150g plain flour
1/2 tsp baking powder
(1tsp vanilla extract)
For the icing:
75g unsalted butter
175g icing sugar
1-2 tbsp milk
(2tsp green food colouring)
(1 tsp peppermint flavouring)
-Preheat an oven to 190c/Gas Mark 5
-Beat the butter and sugar together until soft and fluffy.
-Beat the eggs in one at a time until combined.
-Sift in the flour and baking powder.
-Fold in the milk.
-Divide the mixture into cake cases and bake for 15-20 minutes.
-Cool on a wire rack (before you ice them make sure they're completely cool!)
For the buttercream:
-Beat the butter in a bowl until soft.
-Add in the other ingredients and beat until smooth.
-Ice those yummy cakes!
